Who doesn’t love matcha? I’ve made so many things with matcha: french toast, cupcakes, white chocolate matcha cookies, and my favorite absolute favorite…matcha pancakes. This recipe is so easy to make and the perfect option for a breakfast in bed or brunch day!
INGREDIENTS:
1 MASHED BANANA
1 CUP OF FLOUR
1 TSP OF BAKING POWDER
1 TSP OF VANILLA EXTRACT
¼ TSP OF SALT
¾ CUP OF OATMILK (OR ANY PLANTBASED MILK)
2 TEASPOON OF BAKING MATCHA POWDER
Instructions:
- Combine flour, banana, baking powder, matcha powder, and salt in a mixing bowl.
- Combine the oatmilk, extract, whisk to combine, and pour into dry ingredients.
- Combine and whisk until incorporated, allow the batter to rest for 5 minutes.
- Pour ½-¾ cup of batter onto a nonstick pan or griddle over low/medium heat.
- When the top bubbles flip the pancake and cook until ready.
- Serve with maple syrup and fruit.
