Cauliflower Bites

Ah the multifaceted cauliflower. Seriously the amount of things that can now be made with the vegetable that in the past no one wanted to eat. Is now my elite substitute for boneless “wings.” If you didn’t love cauliflower before, you will after this.

Pieces of cauliflower are coated in a breading then tossed in a sauce. These are the perfect appetizers, great for sharing!
This recipe is very easy to make, I coated this in a flour mixture and for the breadcrumbs I used panko. Scroll down for the recipe!

INGREDIENTS FOR BATTER:

1 LARGE CAULIFLOWER HEAD

⅔ CUP OF FLOUR

PINCH OF SALT

1 TSP ONION POWDER

1 TSP PAPRIKA

1 TSP BLACK PEPPER

2 TSP OF GARLIC POWDER

¼ CUP OF HOT SAUCE 

1 CUP OF PLANT BASED MILK

INGREDIENTS FOR SAUCE: 

¼ CUP OF HOT SAUCE

¼ CUP OF PLANT-BASED BUTTER

½ CUP OF HOISIN SAUCE 

INSTRUCTIONS:

  1. Preheat oven 350 degrees Fahrenheit (NOTE: This can be done in the air fryer)
  2. In a large bowl, prepare flour batter: add flour, onion powder, paprika, garlic powder, salt, pepper, hot sauce, and plant-based milk. Mix together and set aside.
  3. In another bowl, mix together panko breadcrumbs, add a pinch of the following: salt, pepper, paprika, and garlic powder. 
  4. Coat each cauliflower in flour batter then coat in panko bread crumbs.
  5. Line cauliflower on a baking sheet.
  6. Bake in the oven or air fryer for 13-16 minutes or until light golden brown. 
  7. After removing the cauliflower, pour sauce over the cauliflower and enjoy!
Be sure to coat each cauliflower in batter and panko breadcrumb mixture, set aside for 5 minutes to be sure the coating has settled.

APPLE CIDER DONUTS: Something easy to make for the APPLE CIDER DONUTS:
Something easy to make for the fall! These were so good.

INGREDIENT FOR DONUTS:
1 ½ cups of flour
½ cup of sugar (brown or granulated)
1 ½ teaspoon of baking powder
¼ teaspoon salt
½ teaspoon ground cinnamon
1 cup of reduced apple cider (by bringing your apple cider to a boil and reducing heat until you have ½ cup of apple cider left, if you don’t want to reduce you could simply just add ½ cup of apple cider to the recipe!)
¼ cup of plant-based milk
3 tablespoons of applesauce
1 teaspoon of maple syrup
½ teaspoon of vanilla bean paste or vanilla extract
2 table spoons of coconut oil (or melted vegan butter)

Sugar-Cinnamon Mixture:
1 cup of Granulated or brown sugar
2 heaping teaspoons of ground cinnamon
Melted butter or coconut oil

In a large mixing bowl, add your apple cider, sugar, apple sauce, oil, maple syrup and vanilla and whisk together. Slowly add in your dry ingredient by first adding the flour, then sift the baking powder, salt, and cinnamon to your wet ingredients. Once sifted, mix everything together until a batter forms.

Spray the donut pan with a cooking spray. Then, add the batter to the pan making sure not to cover the holes in the center. Bake at 350f for 12-15 minutes until the donuts are baked through. Use the topping by brushing each donut with a little vegan butter or coconut oil on all sides, then dip into the sugar-cinnamon mixture to coat on all sides. Enjoy!

INGREDIENTS FOR THE DOUGH:
3 cups of all-purpose flour (be sure it is sifted)
1 cup of warm plant-based milk
2 ¼ (or one packet) of instant/traditional yeast
3 tablespoons of plant-based butter (I use country crock)
3 tablespoons of brown sugar (or white)
¼ teaspoon of salt

INGREDIENTS FOR THE MIXTURE/FILLING:
2-3 tablespoons of plant-based butter
1 tablespoon of cinnamon
2-3 tablespoons of brown sugar 
Apple mixture:
6 chopped golden delicious apples
1-2 tablespoon of brown sugar 
heaping spoonful of cinnamon

INGREDIENTS FOR THE ICING:
½ cup of room temperature plant-based butter
½ – ¾ cup of plant-based cream cheese (my favorite brand is tofutti, highly recommend)
2 cups of icing sugar (powdered sugar)
1 teaspoon of vanilla extract

CREAMY PROTEIN PASTA made with silken tofu 🌱 I CREAMY PROTEIN PASTA made with silken tofu 🌱

Ingredients:
2 cups of roasted sunset tomatoes 
1 pack of silken tofu (16 oz)
4 chopped garlic cloves
1 tbsp tomato purée 
4-5 fresh basil leaves 
1-2 tbsp of nutritional yeast 
1 shallot bulb chopped 
Optional: 1/2 cup of chopped red pepper 
Black pepper, salt, red pepper flakes(optional) 
1/2-1 cup of pasta water 

1. Start cooking your pasta in salted boil water 
2. In a pan heat plant based butter add garlic, shallots, and tomatoes till the tomatoes are nicely roasted
3. In a blender add roasted tomatoes, basil, silken tofu, tomato purée, nutritional yeast, pasta water, and (optional: red pepper)
4. Combine sauce and pasta, stir and serve, garnish with basil and vegan Parmesan - enjoy!

a quick and easy grab and go breakfast option usin a quick and easy grab and go breakfast option using one of my favorites @beyondmeat breakfast sausages. 🌱 prep these & pop them in the freezer for the week! 

Ingredients/suggestions:
- If you’re looking for a protein and nutritious packed bread/bagel my go to is always @daveskillerbread so good and vegan friendly
- tofu for egg substitute but you’re more than welcome to use any egg substitute you prefer, I soak my pieces of tofu in turmeric and nutritional yeast
- @beyondmeat breakfast sausages
- vegan cheese of your choice (here I used @daiyafoods a staple and favorite)
